Sweet Potato Nachos

if you’re in the mood for something simple, hearty and filling, sweet potato nachos may just hit the spot 🙂 This was a surprisingly tasty dinner last night , which I replayed as a salad (with spinach for lunch today. For directions see below. 🙂

Ingredients:

  • 1 tube of Jennie 0 turkey meat with taco seasoning
  • 1 sweet potato
  • Olive oil, salt, pepper
  • Frozen veggies (like corn)
  • 1 Roma tomato
  • 1 avocado
  • 1 small can of black olives
  • Sliced jalapeños
  • Shredded cheese
  • Plain Greek yogurt

Directions:

1. Preheat oven to 400 degrees

2. Cut sweet potato to 1/8 ” slices. Put on parchment paper on a baking sheet, drizzle with olive oil and season with salt and peppers.

3. Bake 10 minutes, flip over, bake another 10 minutes. Then broil on high 2 mins, flip and 2 more minutes to get a crispy / toasty finish .

4. Cook the turkey meat while the potatoes are baking. Add corn .

5. Assemble nachos when the potatoes are done 😍 yum!!

To repurpose as a salad, just add spinach as the base, top with potatoes and meat.
